Pumpkin Soup

A nice warm bowl of soup on a cold fall day is the perfect idea, and it’s even better when you’re dining on this delicious Harvest Pumpkin Soup. Ingredients include:

  • 2 small sugar pumpkins
  • 3 cups chicken stock
  • ¾ cup heavy whipping cream
  • ¼ teaspoon ground nutmeg
  • ½ teaspoon ground sage
  • 1 ½ teaspoons salt
  • 4 tablespoons sour cream

Step 1: Start by preheating the oven to 400 degrees Fahrenheit. Cut the pumpkins in half and remove any seeds and fibrous strands until only the flesh and skin remains. Cook the pumpkins for about 45 minutes (or soft to touch) with the flesh side face down on a cookie sheet. After cooking, allow them to cool, and once they have cooled, remove the flesh. Use a food processor to turn the flesh pieces into pumpkin puree.

Step 2: Combine the chicken stock and pumpkin puree in a saucepan. On medium heat, bring the soup to a simmer. Next, add cream, nutmeg, sage and salt. Remove the soup from heat and serve.

Pumpkin Chili

Chili is another favorite to warm you up on a cold day, and this pumpkin chili is sure to be a treat. Ingredients include:

  • 2 pounds ground beef
  • 1 large onion, diced
  • 1 green bell pepper, diced
  • 2 (15 ounce) cans kidney beans, drained
  • 1 (46 fluid ounce) can tomato juice
  • 1 (28 ounce) can peeled and diced tomatoes with juice
  • ½ cup canned pumpkin puree
  • 1 tablespoon pumpkin pie spice
  • 1 tablespoon chili powder
  • ¼ cup white sugar

Step 1: In a pot, cook the beef until it has browned over medium heat. When finished, drain away any fat.

Step 2: Add the onions and bell peppers to the beef and cook for five minutes.

Step 3: Add the beans, tomato juice, diced tomatoes, pumpkin puree, pumpkin pie spice, chili powder and sugar. Allow it to simmer for one hour, and then serve.

Perfect Pumpkin Pie

Of course, you can’t have festive seasonal dishes without some pumpkin pie. And this Perfect Pumpkin Pie is sure to do the trick. Ingredients include:

  • 1 (15 ounce) can pumpkin puree
  • 1 (14 ounce) can sweetened condensed milk
  • 2 large eggs
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
  • 1 (9 inch) unbaked pie crust

Step 1: Preheat the oven to 425 degrees Fahrenheit. Next, use a whisk to combine the pumpkin, condensed milk, eggs, cinnamon, ginger, nutmeg and salt. Mix until the consistency is smooth. Pour the mixture into the unbaked pie crust and bake for 15 minutes.

Step 2: Reduce the oven temperature to 350 degrees Fahrenheit. Continue baking for about 35 to 40 minutes. When finished, allow the pie to cool before serving.
